Marso and co s&rsquo;inspire largement de la cuisine du pourtour m\u00e9diterran\u00e9en en passant par la C\u00f4te d&rsquo;Azur, l&rsquo;Espagne, l&rsquo;Italie, le Portugal mais aussi l&rsquo;Afrique du nord, le Liban, la Gr\u00e8ce et au-del\u00e0.<\/p>\n<p>Tomy pioche au gr\u00e9 de ses envies, dans ses influences qui l\u2019inspirent, les adaptant avec finesse, pour une cuisine nouvelle o\u00f9 flirtent tradition et fusion. D\u00e8s l\u2019ap\u00e9ritif, le ton est donn\u00e9 avec la focaccia \u00e0 l\u2019huile d\u2019olive ou encore la tartinade d\u2019ail confit, tapenade et tzatziki. Les entr\u00e9es voyagent sur le bassin m\u00e9diterran\u00e9en passant par Nice et sa pissaladi\u00e8re, les Pouilles et la Burratta au gomasio ; asperges blanches, les A\u00e7ores avec sa brochette de chorizo flamb\u00e9 \u00e0 l\u2019eau de vie.<\/p>\n<p>Deux choix de p\u00e2tes italiennes sont disponibles, dont les Fregola Sarda \u00e0 la joue de b\u0153uf, tomates confites et \u00e9pinards. En plat, escale au Maroc avec l\u2019alliance terre-mer de la pastilla au cabillaud, olives de Kalamata et chorizo, c\u00e2pres, basilic, sauce au beurre blanc ou encore la cuisse de volaille parfum\u00e9e au Raz-el-hanout, servie avec riz et pois chiches, raisins et oignons frits.<\/p>\n<p>En dessert, le d\u00e9licieux riz au lait se twiste de cannelle, pistaches d\u2019Iran et caramel ou encore les Pasteis de Nata portugais se mariant \u00e0 la ganache au caf\u00e9.<\/p>\n<p><em>Apr\u00e8s avoir baptis\u00e9 son deuxi\u00e8me restaurant Hugo en hommage \u00e0 son fils ain\u00e9, Marso
